#IDDSIChallenge: No-Bake Mixed Berry Cheesecake by Thick-It®

In honor of National Dysphagia Awareness Month in June, the National Foundation of Swallowing Disorders and International Dysphagia Diet Standardisation Initiative (IDDSI) teamed up to host the 2019 #IDDSIchallenge, inviting organizations, patients, healthcare professionals and more to show the world their best culinary delights, tested using the IDDSI Framework. The Thick-It® brand submitted its No Bake Mixed Berry Cheesecake, made using Thick-It® AquacareH2O water and Thick-It® Mixed Fruit and Berry Purée, for the challenge – check out the full recipe below! No-Bake Mixed Berry Cheesecake by Thick-It®

Ingredients:

  • 1 package (3.4 oz.) cheesecake flavored instant pudding mix
  • 14 fluid ounces Thick-It® AquacareH2O water (either Mildly Thick or Moderately Thick consistencies can be used)
  • 2/3 cup non-fat dry milk powder

Method of Preparation:

In large mixing bowl, combine all ingredients and whisk for two minutes. Or, for best results and smooth texture, use a blender to combine and mix on medium-low speed. Refrigerate and serve chilled. Top with Thick-It® Mixed Fruit and Berry Purée for a delicious mixed berry cheesecake.

IDDSI Spoon Tilt Test Level 4 – Puréed:

With a spoonful of cheesecake, the dessert held its shape on the spoon and when tilted to the side, the sample slid off easily with a light shake.
