Puréed (PU4) Pumpkin Cheesecake

Enjoy the warm and welcoming flavors of fall any time of year with this simple and delicious homemade Pumpkin Cheesecake.


1/2 cake 17 oz. Sara Lee® Classic Cheesecake, defrosted

1/2 cup Pumpkin Purée, Canned

1 Tbsp + 1tsp Maple Syrup

1/4 tsp Vanilla Extract

1 tsp Pumpkin Pie Spice

1/4 cup 2% Milk

1/4 cup Thick-It® Original Food & Beverage Thickener

Serving Size

1/6 of 17 oz cake


1. Wash hands before beginning preparation. Sanitize surfaces and equipment.

2. Cut Sara Lee® Classic Cheesecake (SKU# 02011) in half. Cut the half into smaller pieces to allow for easier food processing. Place pieces in small food processor. Process (or pulse) for approximately 40 seconds.

3. Add pumpkin purée, maple syrup, vanilla extract, and pumpkin pie spice. Process 10 seconds or until mixed.

4. Add milk and Thick-It® Original Food & Beverage Thickener to the food processor, and process for another 25 seconds until smooth throughout.

5. Spread evenly into a medium bowl. Cover with plastic film and refrigerate. Allow cheesecake to thoroughly chill for 3 hours or overnight. Hold at 40°F or lower until service.

6. Remove from refrigerator. Test consistency before serving per IDDSI Testing Methods for IDDSI Puréed Level 4 (PU4) using the Fork Drip Test and Spoon Tilt Test.

7. Portion into thirds.

  • Amount of liquid can vary. Recipe may be altered to include more or less liquid and/or more or less Thick-It® Original Food & Beverage Thickener depending on the results of IDDSI testing.
  • Recipe standardized and tested at 40°F. Temperature may affect IDDSI testing results.
