Minced & Moist (MM5) Chocolate Cream Pie

Serve up a sweet and creamy chocolate dessert with this IDDSI-compliant recipe from Sara Lee®.

Ingredients

1/2 Pie 13.9 oz Sara Lee® Chef Pierre® Cream Pie 10" No Sugar Added Chocolate, Defrosted

1/2 Cup + 2 Tbsp 2% Milk

3 Tbsp + 1 tsp Thick-It® Original Food & Beverage Thickener

1 #10 Scoop

Directions

1. Wash hands before beginning preparation. Sanitize surfaces and equipment.

2. Place half of the Chef Pierre® Cream Pie 10″ No Sugar Added Chocolate (SKU# 7114) into a hotel pan crumb side up.

3. Use a fork to break up crumbs into small pieces.

4. In a separate bowl, combine milk and Thick-It® Original Food & Beverage Thickener. Whisk briskly until thickener has dissolved. Let it thicken for one minute.

5. Pour thickened milk over pie.

6. Mix until thickened milk is evenly distributed. Do not overmix. Mixture may be lumpy, and crust will soften.

7. Cover with plastic film and refrigerate. Allow pie to thoroughly chill for 3 hours or overnight. Hold at 40°F or lower until service (CCP).

8. Remove from refrigerator. Test consistency before serving per IDDSI Testing Methods for IDDSI Minced & Moist Level 5 (MM5) using the Fork Drip Test and Spoon Tilt Test.

9. Portion a #10 scoop and shape as desired.
